feat: add HTTP metrics middleware for Prometheus monitoring
- Add custom metrics: http_requests_total, http_request_duration_seconds,
http_errors_total, http_requests_in_progress, http_response_size_bytes
- Track method, route, and status_code labels
- Normalize routes to avoid high cardinality
